July Cupcake Hero WINNER! (finally right?)

Where does the time go?? (I find myself saying that alot lately huh?)

It’s been 3 weeks since July Cupcake Hero ended and trust me when I say that I am baked out! Nikki and I are seriously overwhelmed with the response to our patriotic summer theme. I have a feeling my local Costco is sick of me asking if they have any more blueberries and strawberries available. LOL.

Also a quick thanks to Laurie, the founder of Cupcake Hero, for hosting every month. Before you judge a (wo)man, walk bake a mile cupcake in (her) shoes kitchen. I have a new found appreciation for all her commitment and baking that she does each month for all of us to participate in this event.

** Blue Hawaiian Cupcakes **
Isn’t that blue frosting electric? With a Dorie inspired cupcake, there’s no going wrong esp when you add in some booze! Double the booze and you got a keeper! Am I right? Ay Curacao!

2. Jen from BeanTown Baker
** Red White and Blue No-Bake Frozen Cupcakes **
Did you say no-bake? How perfect is a no bake cupcake with berries in the summer? I don’t know about you but turning on my oven in summer doesn’t happen as often in the winter. And that cookie crust adds a nice crunch after you bite into a chillin’ fillin’.

Ah the age old debate. What makes a muffin a cupcake? Apparently Steph and John disagree but everyone can agree that these blueberry filled cupcakes with whipped cream are tasty no matter what you call them!

For someone who doesn’t like fruit (She’s obviously crazy!) these blueberry and strawberry garnished cupcakes are divine with a light meringue frosting. I am a meringue buttercream believer now!

** Blueberry Lemon Cupcakes with Raspberry Cream Cheese frosting **
She confesses that she used more butter than she was suppose to and it gave the cupcake a muffin+butter taste. Now I am a cupcake girl through and through but give me a blueberry muffin for breakfast any day! Top it with a raspberry cream cheese (T loves his cream cheese!) and you’ve got a tasty “mistake”!

** Blueberry Red Velvet Cupcakes w/ Cream Cheese Frosting **
There’s one way to my husband’s heart and thats with red velvet. Needless to say I didn’t have to ask him 2x if he’d taste test these red velvet cupcakes. I am always looking for new RV recipes to find the perfect one for his taste buds. I have to admit that I wasn’t sure how he’d like the “healthier” RV recipe compared to my go-to but he really dug it! I have future plans to adapt this to a scratch recipe!

** Red Velvet and Blueberry Cupcakes **
Even though Tammy is from New Zealand where July 4th is just another day on the calendar, her blueberry filled red velvet cupcakes were a picture of patriotism complete with cookie stars toppers. How adorable is that?? I think I know what I am gonna do for my next Independence party!

** Angel Food Cupcakes **
Susan is a Cupcake Hero virgin but I think she baked with the best of them. She came up with 2 variations to her angel cupcakes – filling or no filling, coconut or no coconut. I’ll take the filling+coconut please!

** Cherry Jello Cupcakes **
Our esteemed Cupcake Hero leader decided to take a cupcake break by… baking cupcakes? HAHA. But I was tickled that she submitted an entry. You know she’s a mom b/c I think only a mom would think of red=jello. And you can’t go wrong with marshmallow frosting and a sour cherry ball on top. I love it!

10. Sihan from Fundamentally Flawed
** Tomato Soup Cupcakes **
I was blown away by the presentation on these cupcakes. That blue frosting and the red from the tomato is exactly the colors for my future kitchen. They complement each other so well. Talk about creativity though. Tomato soup! But honestly you could put anything with white chocolate and I’d be sold. HAHA.

** White Chocolate Cupcake with Blueberry Filling, White Ganache and Cream Cheese Frosting **
Say that 10x fast! White Chocolate Cupcake with Blueberry Filling, White Ganache and Cream Cheese Frosting Can’t do it can you? HAHA. I’d say that I am a cupcake connoisseur but I’ve never had white ganache before. Oh my! It’s heavenly especially on a cupcake.

12. Ashley from One Imaginary Girl
What do you get when you mix lemon, strawberry and booze? Tongue-gasm! Its no surprise that I loved this cupcake. Anyone that knows me knows I love a good strawberry lemonade but you add a light booze laced meringue buttercream on top and there’s no going back to basic buttercream again.

** Simple Cupcakes **
First of all, my hips want to thank Judy for rescaling her recipe down to 4 cupcakes but my belly wants more! The cherry chips are a great pop of flavor in her moist cupcake recipe. She doesn’t give a frosting recipe so I made some whipped cream to complement. But don’t let the name fool ya. Its definitely not a simple taste. It’s simply delicious!

** Raspberry filled Coconut Cupcakes with Coconut Butter Cream Frosting **
I have a confession. Me and coconut use to be enemies. Ok maybe enemy is too strong of a word. Let’s say acquaintances. Someone you’re polite too but you don’t go out of your way to hold the door open for them. Slowly but surely we’re becoming friends esp after these cupcakes. The coconut flavor goes really well with the raspberry filling. Just in case you didn’t get enough coconut with the cupcake, the buttercream is the perfect complement.

** Golden Cake with Blueberry Filling and Strawberry frosting **
Even though I’d say that all I need is frosting, I wouldn’t turn my nose up at a moist “cake” to complement the frosting. Kate’s cupcake recipe uses sour cream and I love how moist it makes the “cake”. Also using skim milk makes me less guilty about eating more than one. You know I did.

** Smurf cupcakes with strawberry filling and swiss meringue **
These cupcakes bring me back. Back to my childhood when all I wanted to be was Smurfette! What little girl didn’t right? Caroline’s cupcakes are that perfect shade of smurf blue. Don’t you agree? I know Smurfette would approve!

17. Sophie from Flour Arrangements
** Beet the Blues Cupcakes! **
Sophie is a true traditionalist and opted for nature’s red food coloring in her red velvet cupcakes – beet juice! I was excited to try her recipe b/c of the beet factor as well as adding coffee granules. I’ve never seen that in any of my other RV recipes. Of course you all know by now that adding white chocolate will steal my heart every time.

I am a sucker for hearts. The blue fondant heart is a fabulous pop of color against the white frosting. Could you tell that she was a Cupcake Hero newbie? Not from this entry you couldn’t.

** Razzy White Chocolate Coconut Cupcakes **
This was my first time baking with chambord. I know. CRAZY! Though I have drank it with champagne a few hundred times! Mara’s raspberry liqueur cupcake recipe did not disappoint. The raspberry and coconut combination is yum-tastic. And I aint complaining about another white chocolate frosting either! Isn’t her white flower just adorable? It doesn’t seem fair that ppl like Mara have so much cupcake talent huh?

** ABC Cupcake – A Bean and Coconut Cupcake **
Talk about doing something no one else is doing? Red beans! No food coloring for Claire. She paired up red bean with coconut to make this crazy combo. Go figure. It works!

** Tres Leches Cupcakes with Fresh Rasperry Topped with Dulce de Leche Blueberry Swirl Buttercream **
Janna wins the title of Longest Cupcake Hero Name! Congrats to Janna ::golf clap:: There is so much that is right about this cupcake. I love the idea of stuffing the middle of the cupcake with a fresh raspberry. Have I told you all how I am a self proclaimed dulce de leche addict? Hello my name is Clara. I am addicted to DDL. Seriously. I have to make this frosting again. So freaking good.

22. Mary Ann from Meet Me In The Kitchen
** Vanilla Buttermilk Cupcakes with Fresh Strawberry Filling, White Chocolate Buttercream and Candy Coated Chocolate Covered Sunflower Seeds **
Ok maybe I spoke too soon? ::taking it back from Janna:: Mary Ann gets the award for Longest Cupcake Hero name. HAHA. I love how creative she got with her piping and using patriotic chocolate covered sunflowers seeds as her garnish. Pairing the strawberry filling with a white chocolate buttercream is to die for!

23. BB from BB’s Fantabulous Life
** Strawberry ShortyCuppyCakes **
I need to reminisce a little. I use to have a strawberry shortcake lunchbox with matching red plastic thermos when I was little. All the girls in my class were jealous. All the boys wished they could say that their girlfriend had my lunchbox. You know a cupcake is good when it brings back childhood memories. I love that BB decided to pair her strawberry cupcake with whipped cream. The strawberry “cake” wasn’t overshadowed by a heavy frosting. The combination was perfect.

  5. TANYA, See!! It was way tough. Let’s just say that I am glad I don’t have to do this every month b/c I was stressed! haha.

    JANNA, Hmm… I don’t wanna give you any riot ideas. But I would suggest rioting with soft pillows or frosting would be ok. HAHA. Also I checked Laurie’s blog for past CH winners and it looks like it was April from AbbySweets in May!

    MARY, haha sorry sorry! Its not my fault. It’s all Nikki now. Its out of my control. Muhahaha.
